Beef & Peanut Stew
Couscous with Dried Cherries and Raisins
Banana Chicken
4 pieces chicken
8 pieces of bacon
4 bananas
8 oz. butter
Salt and cayenne
Make deep slits in the chicken. Season with lots of salt & cayenne. Fry in hot butter. Remove from pan, keeping hot. Fry bacon, during last part of frying add the banana (cut in 4 pieces, lengthwise, then across). Top chicken with bacon, then banana.
Squash and Yams
2 T vegetable oil
1/4 c chopped onion
1 pound acorn squash, peeled and cut into 1-inch pieces
2 medium yams, peeled and cut into 1-inch pieces
1 c coconut milk
1/2 t salt
1/2 t ground cinnamon
1/4 t ground cloves
Heat oil over medium heat. Add onion, stirring occasionally, until tender. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer 10 minutes. Simmer uncovered 5 minutes longer, stirring occasionally, until vegetables are tender.
Beef and Peanut Stew
1/4 c all-purpose flour
2 T chili powder
1/2 t salt
1/4 t coarse ground black pepper
1 pound cubed beef
2 T cooking oil
1 c chopped onion
2 cloves garlic, minced
1 can diced tomatoes
1 can vegetable broth
3 c peeled, diced sweet potatoes
1/2 c peanut butter
1/2 c coarsely chopped peanuts
Brown beef in oil. Simmer all ingredients about 1 1/2 - 2 hrs, adding water as necessary.
Couscous with Dried Cherries and Raisins
1 c chicken broth
1/8 c dried cherries
1/8 c raisins
1 T margarine or butter
1 c couscous
In saucepan, heat chicken broth, dried cherries, margarine or butter, and 1/4 cup water to boiling over high heat. Stir in couscous; cover and remove saucepan from heat. Let stand 5 minutes. Fluff with fork.
