While watercolors and oils have been used for thousands of years, acrylic paint has a much more recent history. Acrylic paints were developed in the 1940s. They have delightful properties for painters. Like watercolors, they can be mixed with water to create a variety of effects. But like oils, they dry to a water-resistant hardness, making them much more durable. They're far less likely to be bothered by condensation and other environmental issues.

That's part of why, while watercolors are traditionally mounted behind glass, acrylic paintings can be shown without protective (and glare-inducing) glass.
