Baklava

16oz walnuts
1/2 cup sugar
1 tsp cinnamon
1 lb Phyllo sheets
1 cup unsalted butter
1 cup honey

Chop the walnuts finely. Mix the walnuts, sugar and cinnamon well. Grease a 9x13 baking pan, and lay a sheet of phyllo in it, letting it ride up the edges. Brush it with the melted butter. Do this with 5 sheets of phyllo to build the base layer. Now put down a cup of the walnuts. Put on another 6 layers of phyllo-butter. Put down a second cup of the walnuts. Keep doing this until you've used up the walnut mixture, probably 5 sets in total. Put a set of phyllo on top to form the crust.

Trim any extra phyllo left around the edges now. Cut diamond patterns down into the layers, about 1/2 way down. You should end up with about 24 diamonds.

Bake 1 1/4 hours at 300F until the top is golden brown. While it bakes, use a 1-quart saucepan to heat the honey over medium heat. When the baklava comes out, gently pour the warm honey over the top. Cool one hour, then serve warm.
