Braised String Beans
3/4 cup olive oil1 clove garlic, minced
1 large onion, chopped
1/2 tomato, peeled & chopped
1 tsp tomato paste
1 pound string beans
2 tsp parsley
salt & pepper
Saute the garlic and onion in olive oil until soft. Add in tomato and tomato paste, simmer for a few minutes until sauce thickens. Add in string beans, parsley, and salt & pepper to taste. Cover with water and cook until beans are tender.
