Two key ingredients from ancient Greek recipes were lamb and onion. These items were staples of a Grecian diet. This recipe combines the two for a tasty meal.
Lamb and Onions
4 Tbsp olive oil
6 lamb chops
1 tsp salt
Two heads of lettuce
2 tsp dill
4 Tbsp lemon juice
Heat the oil in a saucepan, and chop the onions. Saute the onions until golden brown. Salt the chops and add them to the oil, browning both sides. Wash the lettuce and place leaves on top of the chops. Sprinkle the dill on top and cook about 1/2 hour on medium.
Cool for 10 minutes. Blend eggs well and add lemon juice. Add in 1/2 cup of juice from the lamb chops, stirring constantly. Add the juice mixture back to the lamb chops. Serve hot.
