Almond Macaroons Passover Recipe
Almond Macaroons are the traditional cookie of passover. They are enjoyed by everyone and quite delicious.
2 cups unblanched almonds
1/2 cup sugar
3 egg whites
1 tsp almond extract
1/2 tsp lemon rind
1 pinch salt
Grind up the almonds, and stir in to the sugar, whites, and almond extract. Grind the lemon rind and mix in that and the salt. Roll out into balls about 1" in diameter. Put on greased cookie sheet and press in top gently. Add an almond to the top of each cookie. Bake at 350F for 20 minutes.
