Irish Shamrock Sugar Cookies Recipe

Irish Shamrock Sugar Cookies are incredibly easy to make and are perfect for an after school snack or for an Irish-themed party.

1/2 cup butter
3 oz package instant pistachio pudding mix
1 1/3 cups baking mix
1 egg
1 tablespoon white sugar

Mix the butter and pudding mix. Now add in baking mix, egg and sugar. Flour the counter and roll the dough out to around 1/4" thick. Cut into shamrock shapes with a cutter. Grease a cookie sheet and bake the cookies on it for 10 minutes at 350F.

Decorate with green sprinkles or green icing if desired.
