Easter Bread Doves Recipe

Easter bread doves are a traditional recipe that bring a gorgeous, meaningful decoration to your table that's also healthy for you!

5c flour
1/2c sugar
2 pkgs yeast
1 Tbsp grated lemon rind
3/4 tsp salt
6oz evaporated milk
1/2c water
1/3c canola oil
2 eggs slightly beaten
1c mini chocolate chips

Mix together 2 cups of the flour, plus sugar, yeast, lemond rind and salt. Separately, mix together milk, water and oil. Pour into saucepan and heat until warm. Now blend in flour into milk mixture. Mix in eggs. Slowly add in remaining flour until it forms a dough.

Knead on a floured counter for 5 minutes. Put into an oiled bowl and cover with a dishtowel to rise for 10 minutes. Divide the dough in half. Put half, covered, in the fridge.

Take the portion you're working with and separate it into 9 pieces. Roll each into a thin rope around 10" long. Make a loose knot with each rope. One loose end is the head - form a beak and use the chips for eyes. The other loose end is the tail. Brush the bird with oil, and let rise for 1/2 hour. Work on the other half of dough in the meantime.

Bake for 15 minutes at 375F.
