Cracker Brittle Bars

14 Graham Crackers
1 CUP Butter
1 CUP Packed Brown Sugar
1 TSP. Vanilla
1 1/2 CUPS Chopped Pecans
1/2 CUP Butterscotch Chips
1/2 CUP Chocolate Chips

PREHEAT Oven to 350 Degrees
GREASE a Jellyroll Pan
ARRANGE Graham Crackers Side by Side on the Bottom of the Jelly Roll Pan
IN a Small Saucepan, Cook the Butter and Brown Sugar, Stirring Constantly until the Sugar is Dissolved
BRING to a Boil and Simmer for One Minute
REMOVE From Heat
STIR in Vanilla
POUR the Mixture Evenly over the Graham Crackers
SPRINKLE the Pecans Over the Top
BAKE in a Preheated oven for 10 Minutes
REMOVE Cookies from the Oven and Sprinkle with the Chocolate and Butterscotch Chips
LET Stand until Completely Cool Before Cutting into Bars

TRY Cutting Along the Perforations of the Graham Crackers for an Easier way to Cut
SUBSTITUTE Butter Wafer Crackers, (Captains Crackers) for Graham Crackers
SUBSTITUTE All Chocolate Chips or All Butterscotch Chips instead of Half of each. Or Substitute all Peanut Butter Chips.
