Common Baking Substitutions



We've all had situations where we were out of an ingredient and needed to find another substitution that was Close Enough. Here are some baking substitutions for your to use in emergencies.

1 Cup sifted all-purpose flour = 1 cup plus 2 Tbsp sifted cake flour
1 Tbsp cornstarch = 2 Tbsp flour or 4 tsp tapioca
1 tsp baking powder = 1/4 tsp baking soda plus 1/2 tsp cream of tartar
1 Cake of yeast = 1 package of dry yeast
1 Cup of granulated sugar = 1 cup firmly packed brown sugar
1 Cup of honey = 1 cup sugar plus 1/4 cup liquid

14 square graham crackers = 1 cup fine crumbs
22 vanilla wafers = 1 cup fine crumbs

1 Square of chocolate = 1 ounce or 3 to 4 tablespoons cocoa plus 1/2 tablespoon fat

2 tablespoons butter = 1 ounce
1 stick or 1/4 pound of butter = 1/2 cup
1 Cup of sour milk = 1 cup milk plus 1 tablespoon vinegar or lemon juice
1 Cup of Milk = 1 cup sour milk or buttermilk plus 1/2 teaspoon baking soda
1 Cup of whipping cream = 2 cups whipped
12 to 14 Egg yokes = 1 cup
8 to 10 Egg whites = 1 cup

1 Pound of walnuts in the shell = 1 1/4 to 1 1/2 cups shelled
1 Pound of almonds in the shell = 3/4 to 1 cup shelled
Juice of 1 lemon = 3 tablespoons
Grated peel of 1 orange = About 2 tablespoons
1 Medium apple, chopped = About 1 cup
3 Medium Bananas = 1 cup mashed
1 Large Marshmallow = 10 miniature marshmallows
