Carrot Cake Recipe



2 c flour
2 c sugar
1/2 tsp salt
1 tsp baking soda
2 tsp ground cinnamon
3 eggs
1 1/2 c vegetable oil
2 c finely grated carrots
1 tsp vanilla extract
1 c well-drained crushed pineapple
1 c shredded coconut
1/2 c chopped nuts

Frosting:
6 ounces cream cheese, softened
3 c confectioners' sugar
6 Tbsp butter
1 tsp vanilla extract

Combine flour, sugar, salt, baking soda and cinnamon. Add in eggs, vegetable oil, carrots, and vanilla. Now stir in pineapple, coconut and nuts.

Pour batter into a greased 13 x 9 baking pan. Bake at 350F for an hour or until cake tests done. Cool.

Combine frosting ingredients in a small bowl; mix until well blended.
