Flourless Chocolate Cake Recipe
Flourless chocolate cake can be time consuming, but the effort is worth it. This case is dense and very richly flavored. This is often served with raspberries.
1/2 cup water
1 cup sugar
8 oz unsweetened chocolate, chopped fine
4 oz semisweet chocolate, chopped fine
1 cup unsalted butter
6 large eggs, at room temperature
1/3 cup sugar
Whipped cream for topping
Boil the water and sugar in a saucepan. Boil for about 4 minutes and then add in both chocolates. Take off the heat and stir until smooth. Add in the butter, cut up into small pieces.
Using a mixer, whip the eggs and sugar for 15 minutes until stiff. Put mixer on low and stir in chocolate.
Grease a 9" round pan and pour the chocolate mixture into it. Float this pan in a larger baking pan with boiling water in the larger pan. Cook for 25 minutes at 350F. Serve with whipped cream either warm or cold.
