Passover Cheesecake Recipe



Passover brings out the creative side of any cook, because the ingredients list is limited to Kosher for Passover items. This cheesecake recipe works well!

Crust:

3 tablespoons sugar
1 teaspoon cinnamon
6 tablespoons margarine, cut into chunks
1 cup matzo meal

Cheesecake:

1 pound cream cheese
2 eggs
1/2 cup sugar
1 teaspoon vanilla or 1 tablespoon orange juice

Topping:

1 cup sour cream
2 tablespoon sugar
1/2 teaspoon vanilla

Crust: Combine all ingredients in processor bowl and process until well blended. Press into bottom and up sides of a greased 9- inch pie plate. Do not bake.

Cheesecake: Process cheese with eggs, sugar and vanilla for 30 seconds. Spread cheese mixture over crust. Bake in 375 degrees Fahrenheit oven for 25-30 minutes or until set. Cool.

Topping: Combine all ingredients and process. Spread over cake and return to oven for five min. Cool and chill.
