I have been to the Florida Keys many times, and the Westin Beach Resort is pretty much the DREAM spot to stay. It can be pricey - their normal available web rates usually start around $180/night. However if you're savvy and scour the web, you can find them at $129/night!
This hotel has TWO heated pools, one with a waterfall. There's also a white sand beach! There is massage therapy available, plus a sauna and whirlpool. There's even a great hardwood forest to go exploring and walking through!

While some hotels barely have one restaurant, the Westin Beach Resort has FIVE!! They have Treetops - with piano music every night and delicious food. Next, they have Cafe Key Largo, a hip place to watch the sun set. Third, Parrot's Tapas Bar has a pool table and fun music for dancing. Fourth, Splashes is by the pool and serves sandwiches and drinks. Finally, Waves is down on the beach and keeps you going.
This hotel has FOUR kinds of rooms too. There's the standard room, no view. My favorite is the FOREST VIEW that looks out over their great forest. Third is the Bay View which as you guessed looks out on the water. Finally is the Jacuzzi Room which is pricey but luxurious.
The best part - apparently manatees swim right up to the dock!
